A rough stone,200 grit or so, is used primarily to repair neglected or worn blades by removing chips or setting a new bevel angle on a blade. It will remove a lot of material quickly.
A medium grit stone, tpically 1000 to 1500, is usually the first stone you will use if the knife is very dull, but not damaged. The opposing side is a finer 1000 grit stone that is used for minor scratches and final honing.
A fine stone, typically 4000grit or more, is used for polishing a cutting edge until it is very sharp, because it strikes a very good balance between sharp and durable
